Press tofu between paper towels for 15 minutes to remove excess moisture. Cut into 1-inch cubes.
In a bowl, gently toss tofu cubes with soy sauce, garlic powder, salt, and pepper. Let marinate for 5 minutes.
Sprinkle cornstarch over the seasoned tofu and toss gently to coat all pieces evenly.
Heat vegetable oil in a large non-stick pan over medium-high heat until shimmering.
Add tofu cubes in a single layer, leaving space between pieces. Cook for 3-4 minutes without moving until golden brown.
Flip tofu carefully and cook another 3-4 minutes until all sides are golden and crispy.
Transfer to a paper towel-lined plate to drain briefly. Serve immediately while crispy.
