Brown sausage in a large skillet over medium heat, breaking it up as it cooks. Drain fat and set aside to cool.
Grease a 9x13 inch baking dish with butter. Layer cubed bread evenly in the bottom.
Sprinkle cooked sausage over bread, then top with shredded cheese.
In a large bowl, whisk together eggs, milk, dry mustard, salt, and pepper until well combined.
Pour egg mixture evenly over the casserole. Press down gently to ensure bread absorbs liquid.
Cover tightly with plastic wrap and refrigerate overnight (at least 4 hours).
Remove from refrigerator 30 minutes before baking. Preheat oven to 350°F.
Remove plastic wrap and bake uncovered for 45-50 minutes until golden brown and center is set.
Let stand 10 minutes before serving. Cut into squares and serve hot.
