Toast the sourdough bread slices until golden brown and crispy on both sides.
Cut avocados in half, remove pits, and scoop flesh into a bowl. Add lime juice, 1/2 teaspoon salt, and 1/4 teaspoon black pepper. Mash with a fork until creamy but still slightly chunky, being careful not to over-mash.
Heat butter in a large non-stick skillet over medium-low heat until melted and foaming.
Crack eggs into the skillet, being careful not to break the yolks. Season with remaining salt and pepper. Cook for 2-3 minutes until whites are almost fully set but yolks are still runny, then cook for another 30 seconds to 1 minute.
Spread the mashed avocado mixture evenly over each slice of toasted sourdough bread without pressing down too hard.
Carefully place one over easy egg on top of each avocado toast. Sprinkle with red pepper flakes if desired and serve immediately.
