Preheat oven to 375°F. Grease a 9x13 inch baking dish with butter.
Cook chopped bacon in a large skillet over medium heat until crispy, about 6-8 minutes. Remove bacon and set aside, reserving 2 tablespoons of bacon fat.
In the same skillet with bacon fat, sauté minced garlic for 1 minute until fragrant. Add butter and let melt.
Whisk in flour and cook for 1 minute. Gradually add cream and milk, whisking constantly. Cook until thickened, about 3-4 minutes.
Remove from heat and stir in 1.5 cups cheddar cheese, gruyere cheese, thyme, salt, and pepper until melted and smooth.
Layer half the sliced potatoes in the prepared baking dish, overlapping slightly. Pour half the cheese sauce over potatoes and sprinkle with half the bacon.
Repeat with remaining potatoes, cheese sauce, and bacon. Cover tightly with foil and bake for 45 minutes.
Meanwhile, mix panko breadcrumbs, remaining cheddar cheese, parmesan cheese, and olive oil in a bowl.
Remove foil from potatoes and top with breadcrumb mixture. Bake uncovered for 20-25 minutes until golden brown and bubbly.
Let rest for 10 minutes before serving to allow the cheese sauce to set.
