Preheat oven to 400°F (200°C). Pat chicken thighs dry and season both sides with salt and pepper.
Heat 2 tablespoons olive oil in a large oven-safe skillet over medium-high heat. Brown chicken thighs skin-side down for 5-6 minutes until golden, then flip and cook 3 more minutes. Remove and set aside.
In the same skillet, add red onion and cook for 3 minutes until softened. Add garlic and cook for 1 minute until fragrant.
Add cherry tomatoes, olives, oregano, thyme, lemon zest, and remaining olive oil to the skillet. Season with salt and pepper and stir to combine.
Nestle the browned chicken thighs back into the skillet, skin-side up. Crumble feta cheese around and over the chicken and vegetables.
Transfer skillet to preheated oven and bake for 25-30 minutes until chicken reaches internal temperature of 165°F (74°C).
Remove from oven and drizzle with fresh lemon juice. Let rest for 5 minutes before serving. Garnish with additional fresh thyme if desired.
