Ingredients
- 1 cuplong-grain white rice
- 1 1/2 cupwater
- 1/2 tspkosher salt

Place rice in a fine-mesh sieve. Holding sieve in the sink, run cold tap water over rice, gently stirring with a clean hand until water runs mostly clear. Turn off water and gently shake sieve to discard as much remaining water as possible. Set rice in sieve aside.

In a medium pot over high heat, bring 1 1/2 cups water to a boil. Add salt, then pour rice into pot. Using a flexible rubber spatula, encourage all grains into pot.

Bring to a simmer, then reduce heat to medium-low, cover, and simmer, undisturbed, until water is absorbed, about 15 minutes.

Remove pot from heat, remove lid, and cover pot with paper towel. Replace lid over paper towel and let steam for 10 minutes.

Fluff with a fork and serve.
